So, my mom found this recipe this past Spring and we have been making it a gazillion times. She likes to watch Paula Deen and found this recipe on her show. My two kids like watching Paula Deen with her and my son always likes to imitate her by saying - Hey Y'all!
With this salad we have been serving a baked potato bar and a nice warm brownie - just the perfect size lunch!
Broccoli Cole Slaw
2 bags Ramen Noodle Soup in Oriental
3/4 stick Butter
1/4 cup Slivered Almonds
2 bags (12-ounce) bags broccoli cole slaw (in the bagged salad section of the grocery store)
1/4 cup sunflower seeds
Chopped green onions, for garnish
Dressing Mix:
3/4 c canola oil
1/4 c brown or white sugar
1/4 c apple cider vinegar
1 ramen noodle seasoning packet
Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low/medium heat. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat). Meanwhile, whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles, almonds, and sunflower seeds. Pour dressing over salad and toss to coat. Garnish with chopped green onions.
mmmm. this is one of my favorites!!

Ha! Should have checked your blog before I went to the store today, because I was so excited to see broccoli slaw (I'm sure it's been there all along) that I bought a bag. Of course I don't have everything else I need to make this. But I will soon! Mmmmm.

Thanks for a wonderful weekend! It was a pleasure to meet you and the gals from Simple Scrapbooks. Like, Denise, Beth, and Mary C, I anxiously await more recipes because the food was delicious and beautifully presented. It makes me want to host a party so my friends can experience some of the wonders of Sweetwater House! I wish I could join you again this weekend, but duty at the local festival calls. Hope the weather is as beautiful as it was for the Fort Morgan festival and car show!
